Make Yummy Zucchini Burgers Recipe

zucchini burger recipeI had these for zucchini burgers dinner last night and they are scrumptious!

They were definitely fast and healthy, though not vegetarian.

Turkey is a nutrient dense meat, often referred to as a super food. Add zucchini for fiber and moisture and you will LOVE these.

1 pound ground turkey or chicken
½ cup onion, small dice
3 small zucchini, grated
1 tsp grated ginger (or out of jar)
½ tsp minced garlic
1 tsp soy sauce
1 egg
1 tsp tomato paste
½ cup whole wheat breadcrumbs (or more as needed)
1 tsp. chopped fresh thyme
¼ tsp. salt
¼ tsp. Black pepper


  1. Put in large bowl and use hands to combine.
  2. Shape into small patties. Pan-sear or grill until done.
  3. Serve on whole grain bun.

These turkey zucchini burgers are full of fiber and good for you!

    I cooked this recipe tonight. Sensational taste. The list of ingredients sounds like a weird combination – crossing traditional Italian flavours with traditional Asian flavours. But the result is quite lovely. My fussy five year old gobbled them up! He had no idea at all he was eating so much vegetable with his meat patty!
    Some changes I made; I squeezed out the excess moisture from the zucchinis before mixing them in with the meat. It makes for a much more compact patty, easier to cook. Also, as with most meat patty making, it’s a good idea to moisten the hands to roll them. I chose to dust each patty with plain flour after rolling too. Both of these techniques make it easier to handle the patties as you are going about cooking them.
