Joan Boardman is one of our “6 Weeks To The New You” participants. She sent in this recipe. It fits all the criteria: fun-fast-healthy. I am a big fan of salsa and I like this recipe because it can be created year-round, even when the fresh tomatoes aren’t in season. You can avoid hidden sugars found in store bought salsas by making your own. Thank you, Joan for submitting this healthy recipe! Our first winner was from England. Healthy Salsa Recipe

1 can crushed tomatoes (35 oz)
1/2 chopped white onion
1/2 chopped green pepper of choice
1/8 teaspoon pepper
1/2 bunch of chopped cilantro

Mix the above ingredients and add other spices if you need to. I
believe you’ll like it as is. Just be sure to let it sit overnight
before using it as a salsa, topping for fish, poultry or turkey. Enjoy!
