Jerk Chicken – Great Entertaining Recipe

This is a really great summer entertaining recipe. You can have grilled jerk chicken dinner today and do extra chicken to mix up into this terrific Summer Grilled Jerk Salad tomorrow. When grilling your chicken sprinkle it liberally with Jerk Seasoning then grill until done. Jerk seasoning is a dry seasoning blend that originated on the Caribbean island of Jamaica and that is how it got its name. Jerk seasoning is used primarily in the preparation of grilled meat. In this recipe I also use it as a spice for the salad. When the meat is rubbed directly with the seasoning mix, it produced a tenderizing effect and stringy meat which in Jamaica is referred to as Jerked chicken or pork. This recipe can serve the masses of people! The more pasta you use, the more people you can serve.

Ingredients
1 can (15 oz.) black beans-wash and drain
2 cup pineapple-chopped
1 small red pepper-diced
1 tsp. Jerk Spice Blend (recipe follows)
1 small red onion-chopped
1 lime-zested and juiced
1/3 cup reduced fat mayonnaise
2 Tbs. orange or pineapple preserves
3 cup cooked chicken-shredded
2 cup after cooking whole wheat pasta
1 head romaine lettuce-wash and slice thinly

Jerk Chicken Method
• Grill and cool the chicken.
• Slice, dice and chop all of your ingredients.
• Combine all ingredients except lettuce and mix well. If using fresh pineapple add just before service.
• Serve over bed of lettuce. If using fresh pineapple stir in just before service.

• The enzyme bromine in pineapple is a natural tenderizer. Never put mix fresh, raw, pineapple with a meat protein for a long period. The natural tenderizer will cause your meat to become mushy. This is the same reason you can not mix fresh raw pineapple in gelatin desserts. If you want to bypass this problem, just grill or sear your fresh pineapple before adding it to your dish. Once it is cooked, the tenderizing effect is reduced to a point of being a non-issue. Canned pineapple is already cooked.
Jerk seasoning blends vary depending on who makes it. You can mix up your own using the following guidelines. Don’t be afraid to change it for your own taste.

Deb’s Famous Jerk Seasoning

4 tablespoon ground allspice
1 tablespoon dried thyme
1 tablespoon paprika
1 tsp ground red pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 crushed dried scotch bonnet pepper (or other)
1/4 teaspoon black pepper
