Easy Egg Casserole Brunch Recipe

This is a really easy egg casserole recipe that can be thrown together the day before, then finished on your special day.

Healthy Mediterranean – Easy Egg Casserole

This healthy egg casserole will become a family favorite!

Be creative and change the ingredients to meet your family’s tastes.

1 med. zucchini – matchstick or grated
1/2 red pepper-diced
1 sm. onion-diced
3 clove garlic-pressed
1/2 cup pitted olives – drained & chopped
2 cup mushrooms – washed and sliced
2 Tbs. capers – chopped
1 bunch scallions sliced-end to end
1 tsp. dry seasoning of your choice mix or 1 Tbs. fresh herbs
6 whole eggs
(16 oz.) pkg. egg substitute (or fresh egg whites separated)
¾ cup non-fat sour creamJoin The 6 Weeks Wow Diet Program
4 oz. Provolone cheese – grated
3 cup whole grain bread – cubed
1 Tbs. butter or margarine
1 cup tomato sauce

  1. Combine all of the ingredients except the butter and the tomato sauce.
  2. Grease a 12” skillet or casserole well with the butter and bake at 375 degrees until set. Approx. 30 minutes.
  3. After removing from the oven allow to “rest” and set up for 5 minutes.
  4. Unmold onto large platter and top with tomato sauce.

    So, you use 6 whole eggs AND (16 oz.) pkg. egg substitute (or fresh egg whites separated).
