Healthy Mediterranean Egg Casserole

This is a great brunch casserole recipe and is easy to throw together. You can combine the egg mixture the day before, then on your special day, just stir in the bread and pop in the oven.

Healthy Casserole Ingredients

This healthy egg casserole will become a family favorite! Be creative and change the ingredients to meet your family’s tastes.

1 med. zucchini – matchstick or grated
1/2 red pepper-diced
1 sm. onion-diced
3 clove garlic-pressed
1/2 cup pitted olives – drained & chopped
2 cup mushrooms – washed and sliced
2 Tbs. capers – chopped
1 bunch scallions sliced-end to end
1 tsp. dry seasoning of your choice mix or 1 Tbs. fresh herbs
6 whole eggs
(16 oz.) pkg. egg substitute (or eggs separated)
¾ cup non-fat sour cream6 week diet - active kids
4 oz. Provolone cheese – grated
3 cup whole grain bread – cubed
1 Tbs. butter or margarine
1 cup tomato sauce

  1. Combine all of the ingredients except the butter and the tomato sauce.
  2. Grease a 12” skillet or casserole well with the butter and bake at 375 degrees until set. Approx. 30 minutes.
  3. After removing from the oven allow to “rest” and set up for 5 minutes.
  4. Unmold onto large platter and top with tomato sauce.
