Easy Tortilla Bowl With Black Bean Salsa

Tortilla With Black Bean Salsa-This healthy snack will feed an army and is better for you than most processed food convenience meals. Add a layer of cooked ground turkey to make a real dinner out of it.

Make all three components, then assemble last.

Tortilla Bowl
1 Pkg. whole wheat flour tortillas
1 egg white-whisked until frothy
1 tsp. spice blend of your choice

1. Cut flour tortillas in half., then using a stoneware baking bowl, dip tortillas in egg white and line baking bowl with tortillas. Overlap tortillas by approximately one inch, and go around bowl until completely covered.
2. Bake at 350º until golden brown and crisp. Note bowl may need rotated for even baking. Set aside to cool.
3. Sprinkle extra tortillas with lemon pepper seasoning, bake until golden brown.

Dip- Mix all ingredients together well.

2 pkg. (8 oz,) non-fat cream cheese
½ cup reduced- fat mayonnaise
1 tsp spice blend of your choice
2 garlic cloves-pressed or minced

Black Bean Salsa- Combine all ingredients.

½ cup diced red onion
¾ cup thinly sliced red pepper
1 can (2.25 oz.) sliced black olives-drained
¾ medium-hot prepared salsa
1 (14.25 oz) can whole kernel corn-drained
1 (14.5 oz) can black beans-drained and washed
2 garlic cloves-pressed

1 cup grated cheddar cheese

After assembling all the components, line the cooled tortilla bowl with the dip, top with the salsa and sprinkle with grated cheddar cheese. ENJOY!

      My grandson has told me he loves eggplant. I’ve never cooked it. How do you make eggplant Parmesan? Maybe I can get him here if I make his favorite dish – he’s a busy guy these days.
