Boxty: Irish Potato Pancakes

An old poem says: Boxty on the griddle, boxty in the pan, if you can’t make boxty, you’ll never get a man.

Traditional Irish potato pancakes are basically a potato pancake which uses both (normally leftover) mashed potatoes and fresh grated potatoes. Normally made with white potatoes, a healthier version would be to incorporate some sweet potatoes as well.

Boxty has a creamy texture unlike other potato pancakes due to the mashed potatoes. It is like a cross between a pancake and hash brown.

Make Healthy & Delicious Boxty

This is a fun, fast and healthy side dish!
1 cup raw grated potato (white and optionally sweet)
1 cup cooked mashed potato
½ cup flour
1 Egg
Salt and pepper
Butter or oil for frying


  1. Grate raw potatoes and mix with the cooked mashed potatoes. Add salt, pepper and flour.
  2. Beat egg and add to mixture with just enough milk to make a batter that will drop from a spoon.
  3. Drop by tablespoonfuls onto a hot griddle or frying pan. Flatten slightly.
  4. Heat pan until hot then cook over a moderate heat for 3-4 minutes on each side.
  5. Serve with a tart applesauce

Traditionally boxty is fried in butter but olive oil will work too and be a bit of a healthier twist.  They are great with sour cream or ketchup as you prefer!
