York Peppermint Patty Recipe: Rainbow Style

The now famous rainbow version of York Peppermint Patty is something I have been making at my cooking classes this year.

Peppermint patty recipeYork Peppermint Patties are originally from York, PA and I lived in York for 15 years, so it only stands to reason that I would come up with a creative rainbow version of the famous candy!

This is easy to make but takes some planning and patience. Ideally, you should allow time for the ‘dough’ to refrigerate between steps to make it easier to work with.

It can be done all in one swoop if you are careful.

If you want to make full sized peppermint patties use the big batch and if you want to make small ones use the small batch. Either way you will get around 20 York Peppermint Patties out of a batch.

York Peppermint Patty Recipe Ingredients

Full Batch
5 cups powdered sugar
3 Tbs corn syrup
3 Tbs water
3 Tbs butter
1 tsp peppermint extract
Red, yellow, green, blue food colors
Parchment paper
16 ounces dipping chocolate
couple tablespoons butter
Half Batch
2 ½ cups powdered sugar
1 ½ Tbs corn syrup
1 ½ Tbs water
1 ½ Tbs butter
½ tsp peppermint extract
Red, yellow, green, blue food colors
Parchment paper
8 ounces dipping chocolate
couple tablespoons butter

Make The Peppermint Patty Filling First

  1. Beat 4 1/2 (2 ¼) cups of the powdered sugar with corn syrup, water, peppermint extract, and butter at medium speed until just combined.
  2. Knead on a work surface dusted with remaining powdered sugar until smooth.
  3. If it’s not dough consistency, add water or sugar as needed until it’s workable.
  4. Divide dough evenly into 4 balls.
  5. Color each ball using red, yellow, blue and green.

  7. Roll each colored ball out into a rectangle between 2 pieces of parchment paper using plenty of confectionery sugar to be sure they do not stick.
  8. Place each sheet of dough in the refrigerator to chill for about 15-20 minutes.
  9. Remove the parchment from each layer and stack each layer on top of the other.
  10. Gently roll the layered stack to get rid of any air bubbles and even it up as much as possible as you roll it out.

  12. Starting with the long side, roll the dough using the parchment paper to form a log.
  13. Then freeze the roll of dough until firmed up and easy to handle (about an hour).
  14. When log is frozen, cut into 1/4 inch slices.

    Save Filling For Another Day

    At this point it is easy to slice off your full log and freeze it to be finished another day.

    Just wrap it back up in the parchment paper and then in plastic wrap and it will keep in the freezer nicely for weeks.

    Make Homemade York Peppermint Patties

    To make the York Peppermint Patties just take each frozen disk and dip it in melted chocolate.york pepper mint patties

  16. Melt your chocolate with a little bit of butter over a double boiler. Be sure not to get any water in the chocolate or overheat.
  17. Dip each pinwheel one at a time, shaking the excess off and then set on parchment lined cookie sheets.
  18. Refrigerate several hours or eat warm!!

If the chocolate is not smooth enough, just add more butter a little at at time until it becomes dip-able.

These keep well in the freezer if you can stop everyone from eating them long enough to freeze!

Don’t stress about the details!

When putting this together you do not have to be too picky because it always looks good in the end!!
