African Peanut Soup Recipe

Don’t let the long list of ingredients in this African chicken peanut soup recipe fool you! Referred to in West Africa as groundnut stew, it is easy to make in a flash!

Yummy and filling, it can be a light lunch or protein-packed dinner. Be creative with additional vegetables!

African Peanut Soup Recipe

1 lb boneless, skinless chicken breast
½ cup all-purpose flour
2 Tbs curry powder
1 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup peanut oil
½ teaspoon ground coriander
1 inch fresh ginger root – grated
3 cloves garlic – pressed
1 serrano chili pepper, minced
1 qt chicken stock or broth
1/3 cup creamy peanut butter
4 Tbs chopped peanuts
3 scallions – sliced end to end
4 Tbs chopped fresh cilantro

  1. Slice the chicken crosswise into 1/4 inch thick strips. In a baggie, combine the flour, curry powder, salt and pepper. Add the chicken and shake to coat.
  2. Heat the oil and add the chicken pieces in a single layer and cook for 2 minutes per side.
  3. Turn the heat down to medium and add the ginger, garlic, coriander and pepper along with ½ cup of broth. Cook for 2 minutes, then add the peanut butter and stir.
  4. Add the remaining broth gradually, slowly stirring to maintain the soup’s texture. Simmer 10 minutes, stirring occasionally. Taste and add salt as needed.
  5. Garnish with chopped peanuts, scallions, cilantro, and a lime wedge.

Think of this African peanut soup recipe as a sauce and then serve it over a variety of other ingredients like millet, sweet potatoes, tomatoes and/or cooked greens.  If you prefer a little milder peanut soup, then seed the pepper prior to mincing.
