Whole Wheat Pie Crust Recipe

whole wheat pie crustThis simple whole wheat pie crust adds to your dessert the natural whole grain goodness that your family deserves.  Any dessert that includes the whole grains has more fiber and will be healthier. Give your family the best dessert possible!

1 1/4 cup whole wheat flour
1/4 teaspoon sea salt
1/3 cup butter
4-6 Tablespoons cold water

  1. Place flour, salt and butter in food processor.
  2. Blend until butter is cut throughout the flour and the mixture resembles crumbs.
  3. Begin adding water gradually one tablespoon at a time and processing until dough begins to form.
  4. Check bottom of processor to insure that all flour is mixed.
  5. Dump out on a piece of parchment paper and form into a ball.
  6. Place another piece of parchment over top and roll out to 10 inch pie crust.

This is a great recipe to use for cold pies that call for a pre-cooked crust like the Patriotic Red, White and Blueberry pie (coming 8/8/11) or for any traditional baked pie.

This recipe is delicious and will satisfy the whole family even if they are not vegetarians. It can literally go from the car to the table in less than 17 minutes. Yesterday I bought all the ingredients and assembled the dish while putting the groceries away. I walked in the door at 1:05 and was eating by 1:20.

Healthy Mexican Tofu Recipe

This healthy Mexican vegetarian recipe serves 4 and is as spicy as you want it to be, based on your salsa’s heat.

1 (16 oz) jar Chi-Chi’s Salsa- Medium

1 (10 oz) bag Cascadian Farm organic whole kernel corn

1 (8 oz) package Nasoya cubed super firm tofu in water

1 (14 oz) can black beans

  1. Open tofu and drain. Dump out onto 2 layers of paper towels and allow to drain.
  2. Open, drain and wash black beans.
  3. Heat oil in skillet.
  4. Add tofu and sear on all sides.
  5. Add all other ingredients and stir.
  6. Cover and heat for 5 minutes until corn is thawed.

If you cannot find pre-cubed tofu just buy the whole block and after draining it, cut it into cubes. It will add about 2 minutes to the time line but still fall into the category of a 17 minute meal.


Fast and Healthy Chicken Recipe

“Shake and Grill” Chicken Recipe

You have heard of  “shake and bake” chicken… well this fast meal is “shake and grill” chicken and will put a healthy meal on your dinner table in 17 minutes! Part of our “Meals In 17 Minutes Or Less” series, the healthy message is:

  • Use “good” oils to reduce your cholesterol
  • A protein portion is 3 ounces per meal

Fast Healthy Grilled Chicken

The key to easy grilled vegetables is to leave them big so that they can not fall through the slats in your grill!! Here is how to make a fast and healthy chicken recipe that is an entire meal for four in 17  minutes or less:

fast grilled chicken veggies1 zuchini
1 sweet potato
2 carrots
1 onion
4 (3 oz) chicken breast
1 white potato (medium to large)
1 Tbs. olive or grape seed oil
1 Tbs. Italian seasoning mix (or other spice blend)

  1. Wash all your vegetables first
  2. Cut the carrots and zucchini into quarters. Cut lengthwise first, then diagonally.
  3. Slice white potato into 4 slices lengthwise.
  4. Slice onions into 1/2 inch slices.
  5. Slice sweet potato into 4 slices horizontally. (your sweet potatoes should be thicker than the whites)
  6. Place all ingredients in a plastic bag (preferably no holes in the bag!! LOL!)
  7. Shake!
  8. Dump out on your hot grill.
  9. Grill on medium for 5 minutes
  10. Turn and grill till done and serve

Grilled Vegetable Recipe

You can really use any vegetable you want in this healthy chicken recipe. Just pick out ones that you can cut into appropriate sizes so that they all cook  in the same time frame. I used parsnips the other day!
