Recipe Contest - Winning Recipe

Stock in a jarCongratulations to A New Old-Fashioned Girl for winning this week’s WOW! International Recipe Contest. This is an interesting recipe that A New Old-Fashioned Gal calls Homemade Vegetable Stock. I would call it more like base to make stock for your stews and soups. It is definitely healthy and the salt preserves the veggies and flavors your soups too. I am going to make this one for sure. A New Old-Fashioned Girl put together a perfect recipe for making good-for-you soups and stews without the use of chemically laden store bought stocks. I hope to publish this recipe in it’s entirety on the WOW! site sometime in the next few days after talking to A New Old-Fashioned Girl. Congratulations!

Week 2 Worldwide Recipe Contest Winner

Joan Boardman is one of our “6 Weeks To The New You” participants. She sent in this recipe. It fits all the criteria: fun-fast-healthy. I am a big fan of salsa and I like this recipe because it can be created year-round, even when the fresh tomatoes aren’t in season. You can avoid hidden sugars found in store bought salsas by making your own. Thank you, Joan for submitting this healthy recipe! Our first winner was from England. Healthy Salsa Recipe

1 can crushed tomatoes (35 oz)
1/2 chopped white onion
1/2 chopped green pepper of choice
1/8 teaspoon pepper
1/2 bunch of chopped cilantro

Mix the above ingredients and add other spices if you need to. I
believe you’ll like it as is. Just be sure to let it sit overnight
before using it as a salsa, topping for fish, poultry or turkey. Enjoy!

Zucchini Burgers = International Week 1 Recipe Winner

zucchiniA special thanks to everyone who submitted recipes in the 2008 Worldwide WOW! recipe contest this past week. I received emails from Pennsylvania, California, Florida, Ohio, Idaho, Canada and England. With all the fun, fast and healthy recipes to choose from, we had a hard time picking just one. With the help of the judges, three York, PA area food tasters, we narrowed it down to 2 runners up and then went with the following recipe which was sent in by Suzanne from Liverpool, England. Suzanne says that this is a family favorite with garden fresh vegetables and beef. which her Mother always made when Suzanne was a child Suzanne now makes it for her kids and uses ground turkey or chicken. Thank you Suzanne, your Healthy Living CD is on the way to you.

Zucchini Burgers

I had these for dinner last night and they are scrumptious! They were definitely fast and healthy.

1 pound ground turkey or chicken
½ cup onion, small dice
3 small zucchini, grated
1 tsp grated ginger (or out of jar)
½ tsp minced garlic
1 tsp soy sauce
1 egg
1 tsp tomato paste
½ cup whole wheat breadcrumbs
1 tsp. chopped fresh thyme
¼ tsp. salt
¼ tsp. Black pepper

Put in large bowl and use hands to combine. Shape into small patties. Pan-sear until done. Serve with barbecue sauce or horseradish sauce.
