Use Any Holiday Leftover In This Recipe

This is a great meal to make in a hurry from scratch as well as for using leftovers.

As it reads below, you can take this healthy dish to your table in “17 Minutes or Less” using all fresh ingredients. If you want to use leftovers, just substitute any item you want.

The ingredients below are all raw. If you use cooked leftovers they should be added in as the pasta finishes cooking instead of at the beginning. Be creative! Turkey, beef, squashes, cooked green beans all go perfectly with this One Pot Wonder!

Fast & Healthy Meal = One Pot Wonder

When finished this recipe is creamy like macaroni and cheese and very colorful. A colorful plate is the first sign that you are giving your family a wide variety of nutrients.

6 cups chicken stock or water
1 (10 oz. box) bow tie whole wheat pasta
1 small head broccoli – sliced
1 small onion – sliced
8 oz. boneless chicken breast- thin sliced
2 medium carrots – sliced
4 oz. cream cheese
1/4 cup sun dried tomatoes in oil-diced
black pepper to taste

  1. Bring the stock or water to a boil.
  2. While it is heating chop your broccoli, onion, chicken, carrots.
  3. Add all ingredients to pot, down to cream cheese.
  4. Cover and return to a boil.
  5. After returning to a boil uncover and cook 7-8 minutes till pasta is done.
  6. Stir in tomatoes, pepper and cream cheese. Whisk hard to blend.

6 week dietIf you use water instead of stock, taste it when it is done and add some salt to the finished pot.

This recipe really is fast if you take advantage of the time it takes to bring the water to a boil to chop your other ingredients.

2 Healthy Thanksgiving Leftovers

Thanksgiving Turkey Calzone

healthy turkey calzoneI am not a big fan of pizza crust in a can and yet this recipe is loved by all and easy to make with leftover Thanksgiving Turkey.

2 Tbs. semolina flour
1 pizza crust in a can (preferably whole wheat from the healthy grocer)
1 tsp. Italian Seasoning
2 cloves garlic-pressed
3 oz. part skim mozzarella cheese
1 cup cooked turkey strips
½ cup chopped broccoli
¼ cup sliced mushrooms
¼ cup red pepper-diced
3 oz. Parmesan cheese-grated
1 egg

  1. Stretch crust out on a semolina-dusted stone to about 12″ diameter. Sprinkle with Italian seasoning spice blend.
  2. Add all ingredients from garlic to peppers. Place all ingredients on one side of the crust. Top with 2 oz. grated cheese.
  3. Lightly whisk egg with fork and brush edges of crust with egg using a pastry brush. Fold over crust to close and pinch to seal.
  4. Combine 1 tsp. of seasoning mix with egg mixture and brush on exterior of crust. Grate remaining cheese over outside.
  5. Bake at 500º for 12-15 minutes or until golden. Serve with hot tomato sauce.

Healthy Tomato Sauce

healthy foods dietWhen buying prepared spaghetti sauce all sauces are not created equal. Usually, the only prepared spaghetti/pizza sauce in a conventional grocery store that does not have any added sugar is “Classico Tomato Basil”.

Healthy Mexican Turkey Fajitas

Turkey mixture:
1 tsp. olive oil
1 med. onion-sliced
½ cup sliced red pepper
¼ tsp. cumin
¼ tsp. chili powder
Pinch cayenne pepper
Pinch salt
2 cloves garlic
2 cup cooked turkey-strips
1 (14 oz.) can beans of your choice-drain and wash

  1. Sauté onion and pepper in skillet with olive oil. Sprinkle with spices.
  2. When onion is translucent add pressed garlic, turkey and beans. Stir and cook for approximates 5 minutes.
  3. Serve with Assorted Condiments of your choice

1 pkg. whole wheat flour tortilla-warmed
Shredded lettuce
Diced tomato
Chopped avocado (or guacamole)
Sliced black olives
Sour cream
Salsa
Shredded cheddar cheese


Healthy Turkey Stuffing – Dressing

Turkey Stuffing Can Be Healthy

This healthy stuffing is made with whole wheat bread. As seen on TV this recipe is fun, fast and healthy. Now We’re Cooking TV airs in York, PA

Recipe For Healthy Whole Grain Date Dressing

It does not matter if you call it stuffing, filling or dressing this whole grain date dressing will satisfy all and keep the family healthy!

2 stick celery-diced
2 medium carrots-peeled, and shredded
6 slices WW bread-cubed
4 sliced 8-grain whole wheat bread-cubed
1 egg
4 oz. egg white
1/3 cup parsley-minced
1/3 cup fresh herbs-minced (I used rosemary, thyme and sage)
S & P
¾ cup chopped dates
¾ cup turkey stock

  1. In a small sauté pan, sweat the celery and onions covered over medium heat for about 5 minutes.
  2. Combine all ingredients and mix until evenly distributed with out over mixing or breaking up the cubes to much. Put into lightly oiled stoneware casserole and cover with parchment paper or oiled brown bake.
  3. Bake at 350º for 45 minutes.
